Regulations

  • All cakes must be un-iced with no kind of topping at all, except where specified.
  • Packet mixtures must not be used.
  • Set recipes must be used where specified.
  • Ring tins are not allowed – all cakes must be cooked in a single tin.
  • All paper must be removed from cakes and muffins.
  • Cakes, biscuits etc are to be presented in an oven bag on a firm plate. If not presented in oven bag on plate, entries will incur a small fee.
  • Biscuits – in addition to the above, please bring biscuits in a sealed container which will ensure they hold their crispness until judging.

Set Recipes:

Rich Fruit Cake

5 – 55 gm eggs, 1 1/3 cups soft brown sugar, 250 gm soft butter, 500 gm sultanas, 250 gm seeded raisins, chopped, 250 gm currants, 1/3 cup mixed peel, ½ cup glacé cherries (chopped), ½ cup blanched almonds (chopped), 2 cups plain flour, ½ cup self-raising flour, 1 1/2 teaspoons mixed spice, 1 teaspoon cinnamon, 1 teaspoon ground ginger, ½ cup brandy, sherry or rum.  Bake in 20 cm round tin.

Cake Decorating

Deliver to the Cookery Pavilion near Lakeview Hall on Friday 23 May, 7.30 am – 11 am

  • Blocks/dummies may be used in place of cakes. Vase, pillars, tulle, ribbon, wire, stamens & fine natural dried stems are permitted.  No cake will be cut.
  • Traditionally decorated cake – coverage of fondant, marzipan or royal icing
  • Novice class (Class 1037) open to exhibitors who have not won a 1st prize at a previous NT show, soft icing and non-edible ornaments allowed.
